Sweet and Spicy Pineapple Shrimp Boats

Disclaimer: As many things as I know how to cook, and as fancy as my plating is you would think I could make a decent pot of rice, however this is not the case. After many failed attempts at making rice and coming out with a starchy overcooked paste I decided to stop wasting my time and just buy microwavable steamed rice. That way I can guarantee that it will be right every time. Not to mention it save me sooooooooooo much time. Below I listed some different brands, as well as some other shortcuts I use.

Ingredients:

1/2 Fresh Pineapple (diced into small cubes)

1 Small Onion (diced)

3 Cloves of Garlic (minced)

Olive Oil

2 Packs of Microwavable Brown Rice

1 LB of Large Shrimp (peeled and de-veined)

1 Lime

Garlic Chili Sauce (Spicy Item so season to taste)

Cilantro to Garnish (Optional)

Soy Sauce or Liquid Aminos

Black Pepper

Garlic Powder

Ground Ginger

Directions:

1. Standing your pineapple up, cut it in half down the middle.

2. Then proceed to take out the meat of the pineapple by cutting along the perimeter of the fruit, leaving 1/4 of an inch.

3. Next cut the pineapple insides into 3 pieces across and once the long way and scoop out the chunks so you are left with a smooth bowl like pineapple.

4. Dice pineapple insides into small cubes, making sure that you discard the core parts of the pineapple. Once this is done put diced pineapple to the side

5. In a large pan heat oil and add onion, garlic until translucent. Then and pineapple, and season with Black Pepper and Soy Sauce

TIP: Make sure the Soy Sauce you are buying is real soy sauce and not a salt water imitation. When looking at the ingredients you should see Soybeans, Wheat and Salt. If you want to take it to an extra healthy level, use Liquid Aminos.

6. In another pan heat 1 TBS of Olive Oil and add shrimp

TIP: If you read my last Shrimp Recipe you know how to deal with cooking higher quality seafood, if not here's what I said:

With higher quality seafood items like Shrimp Lobster and Scallops you don't want to let your seasonings overpower the natural flavors that that ingredient provides. Instead you want to highlight those flavors. When seasoning your shrimp and other higher quality items less is more. Use fresh ingredients like fresh herbs, garlic and lemon too give your seafood flavor.

7. Season Shrimp with Soy Sauce, Lime Juice, and Garlic Chili Sauce. Cook until pink

8. Follow directions to whatever microwavable rice you chose to use and once its done add right to pan with sautéed onions pineapple and garlic.

9. Season rice with Ground Ginger, Black Pepper, and Garlic Powder to taste.

10. Add cooked shrimp and if you desire more heat add more Garlic Chili Sauce.

11. Next transfer Shrimp and Rice to Pineapple Bowl and garnish with Cilantro.

10. Enjoy!!

The great thing about this recipe is you can substitute the shrimp with chicken. Here is what it looked like the last time I made it.
